A certain percentage of carbon in the environment is radioactive carbon-14. A living organism keeps approximately this percentage, since it's constantly taking in additional carbon from the environment to replace the amount that decays. However, when the organism dies, it stops taking in new carbon-14, so by comparing the percentage that's present in the environment with that present in the sample, we can tell approximately how long ago it died.
