well, there are many different scenario's with a soluble substances and water; diffusion, osmosis, evaporation, dissolving etc.

Dissolving & diffusion- when you add a soluble substance to water such as sugar, the substance moves from a high concentration to a low concentration so the after it is broken down and worn by the water, the sugar particles will 'bond' with the water. However, there may come a point where it no longer dissolves but just sinks to the bottom and this is because the bonds are too strong to become broken so no more can dissolve.

Evaporation & Condensation- Once the soluble substance has dissolved, it does not 'disappear' or vanish, it is just broken into tiny particles throughout the water. Since it has bonded with the water, fishing for the sugar or filtering for it is impossible so you go by means of evaporation. Since water has a fairly low boiling point compared to most melts, you can boil it easily as it will be given enough energy to form a gas, water vapour, but the sugar will not evaporate with it because it is a more dense compound, so crystals are left behind.

Osmosis- is a special type of diffusion where water, containing a solute passes through a partially permeable membrane across a gradient from a large concentration to a low concentration. For example, if in a cell, there is a higher concentration of solute than outside, where there is a lower concentration then water will leave the cell to balance things and try to create an equilibrium. On extremes, the cells can shrivel up and become inactive. If there is a lower concentration of solute in the cell than outside, where there is a higher concentration then water will enter the cell. On extremes, the cells can burst because of too much water..
