Take a mason jar with a lid, put chemicals, inside it (ammonia, methane) stuff like that, put a solid medium in as well, dirt, sand, etc. basically, your making a beach setting of another planet inside of it, i like to add rocks for a cool visual effect, also to make it more realistic, and then you cap it airtight and make sure you tape the cap on tightly so you dont have exchanges of the gasses from outside to inside and vice versa. then you change the "star" for the environment so ull need a pitch black area and get a different colored light for the microbes inside to do photosynthsis with. and you cud go a step further by heating the envirnment by setting the jar on a hot plate(set to a lower temp) or put it in a freezer or something and see what grows in the jar. over time you will create your own extremaphile.
