Approximately 70-80% of the population can roll or flip their tongue back. The ability to do so is thought to be a genetic trait.
Taste is detected by sensory receptors (chemoreceptors) in our taste buds, which cover the tongue but are also found in the soft palate of the mouth and the throat. The cranial nerves associated with taste are the glossopharyngeal (VII), facial (IX) and vagus (X) nerves. When the receptors in the taste buds are stimulated by food, impulses are sent along these nerves to the part of the brain where taste is perceived (in the parietal lobe) The area of the tongue which is thought to be most sensitive to sweet tastes is the tip.
The human tongue has about 10,000 taste buds.
The lingual frenulum is found in the mouth under the tongue. Sometimes this is very short and a person has trouble with the tongue movements and with speaking. This problem has been given the name 'tongue tied'. It can be cut and will allow the tongue to move as it should.Although there is still an ingrained reluctance to recommend surgery. As a result, there are many children who undergo several years of speech therapy with little or no improvement until the tongue tie is detected (often, by chance) and remedied.
Ulcers in the mouth can be caused by anything from gingivitis or poorly-fitting dentures that rub, to "cold sores", to severe B-vitamin deficiency, to diseases like lupus or, which involve abnormal behavior of the immune system. There are many possibilities. The most dangerous possibility is mouth cancer, and the back of the tongue would indicate the most aggressive type. How long they have been present this time, whether you've had them before, what other symptoms or problems you're having, and your history of tobacco use could be important clues. It could be that you are using toothpaste or mouthwash and you still have the taste in your mouth, or it may be that you are ill.
