Yeast is a living organism, a one celled fungus that "eats" by fermenting sugars. The waste products, ethyl alcohol and carbon dioxide, have been found useful to man in brewing and baking. Yeast can produce enough ethyl alcohol in brewing to kill off all common food spoilage bacteria, allowing large amounts of "excess" grain and fruit to be fermented and thus preserved from spoilage. Yeast produce carbon dioxide which makes baked goods rise, giving them a softer texture making them easier to eat.
