Roe is fish eggs, yes, but in this circumstance I believe "roes" is referring to roe deer. http://en.wikipedia.org/wiki/Roe_deer, as in a "herd of roes" "Roe" when referring to the eggs of a fish doubles as the singular and plural, like fish and deer and you get the point. "Waiter, bring me shad roe."
