Protein is the polymer collection of many amino acids, made from carboxylate (COOH) and amine (NH2) groups attached at either end, in the excess of 40 molecules but usually 1000 or more. They could also be called polypeptides, where a peptide is the monomer link CO-NH formed when two amino acids join together in a condensation polymeric reaction in which a water (H2O) molecule is eliminated.

You should also note that protein can be broken down back into its buildings block, the amino acids, using 6 moldm-3 HCl and water.
