I think Arabic shawarma has its own taste because of the spices, garlic sauce and pickles. Other regional versions can be quite different depending on the country. I personally like Arabic shawarma the most, specially chicken shawarma with garlic sauce and pickles. I work with a shawarma machine spinning grillers, so maybe I am a little biased here haha.

PCH answer - shawarma and dog Shawarma is similar to a gyro and is usually made with lamb, goat, chicken, turkey or beef.
Sumac is not a traditional ingredient in shawarma itself, but it is often used as a seasoning or garnish in Middle Eastern cuisine, including dishes served alongside shawarma. Shawarma typically consists of marinated meat, spices, and toppings like vegetables and sauces. However, sumac can enhance the flavor of the dish when sprinkled on top or used in accompanying salads and dips.
The main differences between shawarma and gyro are the type of meat used and the seasonings. Shawarma is typically made with lamb, chicken, or beef, while gyro is made with lamb or beef. Shawarma is often seasoned with Middle Eastern spices, while gyro is seasoned with Greek spices. As for which one I prefer, it really depends on my mood. Both shawarma and gyro are delicious in their own way, and I enjoy them both for different reasons.
Honestly, it depends on the style you like. Traditional shawarma in places like Lebanon, Syria and Turkey is hard to beat, especially from small street spots using real vertical rotisserie grills. But cities like Ottawa and Hamilton in Canada have also created their own legendary shawarma culture. A lot of the flavor really comes down to the seasoning, sauces and how the meat is cooked on the broiler.
No, shawarma is not Greek. It’s a Middle Eastern dish, mainly associated with the Levant. I think people confuse it with gyros because both are cooked on a vertical spit. I work with shawarma at a restaurant, and we use a Spinning Grillers shawarma machine. The first time I worked with one, I actually started wondering about the difference between shawarma and gyros. The seasoning and way they’re served are also different. I usually make chicken shawarma with yogurt, lemon, garlic, cumin, paprika, coriander, salt, and black pepper. I marinate the chicken, stack it on the spit, let the outside cook, then slice it as it browns. So yeah, similar cooking method, but shawarma is Middle Eastern, not Greek.
Chicken shawarma is more popular among food enthusiasts than gyro.
