The main thing they learned was that we could land on another heavenly body. While that may sound obvious, there were many scientists on earth who felt that the Lunar Module would sink into the surface of the moon. NASA was concerned enough about it to make constant checks for vehicle stability for several minutes after landing.

Scientific experiments determined that the moon is cold and has been for most of it's life. Astronauts brought back very few examples of volcanic material from the moon. They found a lot of titanium in the lunar rocks. They also found out that most of the rocks were a mixture of other rocks. They also learned that plants can grow in the lunar soil, provided they have sufficient water. They found out there was no water on the moon. They also found out that the moon's gravity is not constant over its surface. Certain areas of the moon have mass concentrations (mascons) of gravity that altered the path of the orbiting vehicle by several miles each orbit.
