An oil that is partially hydrogenated sometimes changes one or more of its double bond configurations from H2C=CH2 + H2 --->CH3CH3. When naturally occurring saturated fats are altered by partial hydrogenation, they are saturated by hydrogen molecules, breaking the double bond to create single bonds to facilitate the extra hydrogens. This has the effect of straightening the bent shape of the compound and changing its physical properties.
