Fuels typically contain hydrocarbons, e.g. oil, its derivatives, alcohols. These contain hydrogen and carbon (and sometimes oxygen) which react with oxygen in the air, or in the case of rocket engines a peroxide or nitrate, and turn into carbon dioxide and water (CO2 and H2O). Because this breaks chemical bonds it releases large amounts of energy (although some of this energy is used to form new bonds in the products).
