Depends on where it's from, the population size, and how many that are collected. Eating animals that have been bred to be eaten won't harm the eco system(much), because the natural population is left intact. Eating invasive exotic species - like boas in the Everglades - will actually protect the eco system, as you're helping get rid of something that shouldn't be there. Eating vulnerable or engangered species that have been harvested out of the wild will hurt the eco system though.
