Stomates as in plants' stomata? There are cells called guard cells either side of the stomata and when they fill with water the become turgid so bend to open the pore -stomata- then when they have no water they become flaccid and relax, therefore closing the pore. During the day gas exchange occurs, CO2 for O2 which is part of photosynthesis which only occurs during the day, when the sun is out to trigger the light-dependent stage of photosynthesis. So during the night the pore closes as the plant has generated enough food for overnight and the sun is no longer out.
