Usually the liquid being distilled is a flammable liquid, And the gas is less flammable without the peffect conditions but the vapor in between needs less conditions to ignite and will do so with usually just high temperatures or friction. That is why distilling stations hage cooling racks built into them so the vapor is too cold to ignite.
