Turpet is a fish commonly eaten in the Caribbean, I ate some last week in Barbados, since which I have tried to find it online and in the dictionary. Perhaps this is the local name for it. It has a colour and texture very similar to river cobbler. It is a little fatter and meatier than red snapper and very easy to over cook. I ate it fresh, caught and cleaned that day in Sixmen's, St. Peters, but had to freeze the remainder. It does not have the same taste, texture or mouth feel when cooked after freezing. Perhaps this explains why the turpet is not widely known.
