Separator design can be complex. I will just cover the basics. Crude oil from a well needs to be cleaned up, that is removal water and gas, so that it can be sold. The horizontal separator has an inlet at one end, where the crude oil enters. In a three phase separator, the gas will separate from the oil due to the lower pressure in the vessel and flow out of an outlet in the top of the separator. Water is generally less dense than oil so it will settle in the bottom of the vessel. A water level controller is needed to make sure the oil does not drain out the bottom. A common problem is that the gas can entrain some of the oil if the velocity of gas is high in the separator. Baffles are designed to prevent this. The separator never perfectly separates the gas and water from the oil, and a staged separation system may be needed. Gas to be saleable may need to be dehydrated after separation. The water may contain oil, and need additional clean up before disposal.
