"Stoichiometry" (note that there is no second "s") is the study of the relative masses in recipes for chemical reactions.

A stoichiometric mixture is a mixture with exactly the right proportions of the various reactants to produce a given set of products; it takes no account of whether it may be appropriate to have one particular reactant in excess to help drive the reaction forward.
