These elements have been known for along time, Helium is a recent discovery. Since the use of Alchemy was replaced with the study of Chemistry several hundred years ago, no one bothered to invent a Helium "mystic symbol" and put it into Alchemy texts. If you meant to ask where the name comes from, it comes from Helios, the Greek name of the place where helium was first shown to exist (spectroscopically) -- in the sun.
