In biology, we work with living systems. Imagine that your literature professor asks you to debate about Ulysses by James Joyce, but he only let's you see the book cover. It's impossible to answer! You can only suppose.

Now, imagine that your biology professor wants to teach you about crustaceans anatomy (the group of animales that crayfishes corcern with), but he doesn't let you to see inside the animal. Then he asks you what are the similarities with crayfishes and other animal, say, fishes. It's impossible to answer! You can only suppose.

Dissection is important for biology because it let's us know what is inside an organism. Common operational procedures, like repairing a broken bone, are a kind of dissection, the difference here is that we do it with too much care to avoid killing the person. In past ages if you wanted to know how it is inside a human body, you would have to suppose (or watch somebody's body after he were stabbed in a struggle).

Dissection is important because we are curious and it let's us stop supposing and, indeed, knowing.
