We cannot always see it, but water is evaporating all the time. A simple experiment is to put a half full bottle of water on a window ledge, and after about an hour or so (some days it will be a lot faster) you will see "fog" appear in the parts of the water bottle that had no water on it. The darker the water the faster it gets evaporated.
