Respiratory system
The nose, mouth, and ears are collectively referred to as sensory organs or facial features. They play crucial roles in the human body's sensory system, allowing us to perceive taste, smell, and sound. Each organ contributes to our overall sensory experience and interaction with the environment.
Eyes are part of the visual system within the nervous system, while ears are part of the auditory system, also within the nervous system. Both systems work closely with the brain to process sensory information from the environment.
The main organ of the sensory system is the brain. It processes and interprets information received from sensory organs such as eyes, ears, nose, tongue, and skin.
There is not one single sensory organ but several. Eyes, ears, mouth (taste), skin (feel), nose (smell) and the elusive (not so much a physical organ) innate instinct aka intuition. All of these be it separate and/or combined make up the sensory organs. All of these, by way of the Nervous system and more particularly the brain, are what function as the sensory organ(s).
Eyes - Sight, Ears - Hearing, Nose - Smell, Tongue -Taste and Skin - Touch.
The ear is part of the auditory system.

Your answer would be the brain, as ears are connected directly to this organ, it allows us to understand/react to what is happening.

The mouth is medial to the ears. The ears are lateral to the mouth.
Mouth - gutu Ears - taliga
We have two ears and one mouth.
