Water and instant coffee is a homogeneous mixture, specifically a solution, because the instant coffee particles dissolve evenly in the water forming a uniform mixture. It is not an element, as elements are pure substances made up of only one type of atom.

A black coffee with sugar would be a solution, as the sugar dissolves completely into the coffee. However, the coffee itself is a mixture of water, coffee beans, and other compounds, making it a homogeneous mixture. Pure substances only have one type of molecule or atom in them, so coffee and sugar are both mixtures.

No you cannot burn instant coffee; during the process in which instant coffee is made it is roasted at 180 degrees, so when you pour boiling water (which is 100 degrees) over the resulting granules it is not possible to burn the coffee. However the taste of coffee changes distinctly depending on the order in which it is made. For instance if milk is added to the granules before boiling water the resulting taste is mild and creamy, on the other hand if hot water goes in first the resulting taste is full bodied and slightly bitter.
