Look for the key in the front of it or if single page map, bottom corners usually
"North," "left," "turn," "straight," and "destination" are words commonly found in directions.

It is usually referred to as "bearing" but laymen would use "heading" or "direction" They can also be called the "cardinal" directions
They would look on the Map's key and the compass rose.

Either the north or south pole. It would have to be the north pole. You can't walk south from the south pole. Using cardinal directions as a guide you can walk south from the south pole. Using general directions it could only be the north pole.
