Because a sponge is essentially just a pile of unicellular organisms. Grind one up to loose cells and keep these in a petri dish, they will regroup and form a new sponge! They're only rudimentarily specialized - water is propelled through their 'bodies' by flagellated cells, and food particles are taken to the rest of the 'population'. Other cells take care of the defense by creating crystal spines. Sponges aren't real animals, really only a hive of amoebae. Tie the cells together more closely, make them more dependent on eachother, create true organs, and you come closer to true animals (the most primitive being jellyfish).
