Because of pressure. The best way I can describe it is... shake up a bottle of soda. When the cap is on and you haven't damaged the integrity of the cap, its fine. If you put just one tiny crack in that cap, you've got one heck of a soda mess to clean up. Earthquakes put cracks in the caps of volcanoes.
