Because when light is focused onto the retina by the lens, in a human eye the retina will take in the light and transform it into electrical signals, but animals have a layer at the back of their eye called the tapetum which reflects the light rays back through the retina for a second time. This means they pick up things from the light rays that the human eye misses. The tapetum is also the reason that sometimes when you look into an animals eye and apply sudden light to it you see colour, this happens because the iris doesn't have enough time to contract so all the light gets in and some of it reflects off the tapetum back through the retina. This same thing happens in the human eye and causes the red eye effect, but because humans have no tapetum it's the blood vessels that the light reflects off. The tapetum is different colours for different species.
