Why cant Mercury be destroyed by the sun?

It will be engulfed by the sun in about 5 billion years when the sun begins to burn out its fuel and die. The sun will swell and swallow up some of the inner planets. Until then its just really hot.

The Sun is not capable of "destroying" Mercury because Mercury orbits the Sun at a distance where it remains in a stable orbit. Even though the Sun is incredibly hot and has strong gravitational pull, Mercury's orbit is not within the region where it would be physically destroyed.
