Photosynthesis needs light, water, and oxygen. Soil is where the water is, along with other minerals. So yes plants do need soil, unless they have an alternative source for water and those minerals (as in hydroponic farms). Under normal circumstances though, taking a plant out of the soil is effectively condemning it to death.
