Inside of a plant cell, there are organelles called chloroplasts which have a pigment inside of them (called chloropyll) which keeps the plants green. Plants need to be green because green is the best color to capture sunlight during photosynthesis.

Chlorophyll mainly absorbs blue and red wavelengths of sunlight for photosynthesis. These wavelengths are most efficient for driving the process of photosynthesis in plants. Green wavelengths are not absorbed well by chlorophyll, which is why plants appear green.

Green light does affect plants, but it doesn't really provide much help in the plants' growth. Plants that are green absorb all the colors of light except the color green, which is reflected off the plant. This is why we see the plant as green.

Variegated plants can revert to the normal green type sometimes. If you trim off the parts that are green, it will prevent them taking over the entire plant as they are stronger than the variegated leaves. Growing them in full sun also helps.
