For example, a muscle cell only needs information about being a muscle cell so it would turn off information/ genes that it does not need. Also, some genes can be turned on and off when needed. For example, some bacteria can use lactose but lactose is not always present in the environment. Instead of wasting time making lactose enzymes, the bacteria would keep the gene turned off until it was needed.
