If you grow plants to feed to animals in order to eat the animals later, not all of the nutrients in the plants becomes nutrients in the meat.

Quite a lot is lost in the process.

So if humans eat plants directly, you've cut out a huge chunk of losses and made the process a lot more efficient.

The same goes for water. It takes a lot more water if you're going to first grow the crops, then raise the cattle, and then eat the meat. Remove the cattle from the chain and you need a lot less water as well.
