Why does goo freeze?

Goo is both a solid and a liquid as you know. For example a liquid can take the shape of whatever its put into. Goo does the same. But while its being a liquid its also being a solid by it forming into a shape then oozing out. when you put the goo into your hand and squeeze it it feels as if it is a solid. But when you stop squeezing you will see that the goo is oozing out of your hands.
