Because each of them represents an entire layer that has a unique composition and state compared to the other two. For instance, the crust is made up of specific minerals in specific quantities, and is cool and solid, because of it's exposure to space. Because centripetal force keeps all the mass of the planet moving inward while it spins, there is a tremendous heat and pressure on the lower layers, eventually turning solid rock into liquid magma. That's when the mantle begins. FInally, the pressure is so great that there is no choice but for the magma to solidify again into the hard nickel core.
