Due to it's dipole nature.

Water is a polar molecule, meaning that it has an unevenly distributed electrical charge. This Oxygen side of the molecule is slightly more negative than the Hydrogen end, due to the oxygen having more electrons (they have a -1 charge).

The charges repel eachother, forcing water into a "V" shape, and it is described as bent.

This polarity is responsible for a lot of water's properties, such as why it is so cohesive, why it conducts electricity and why it makes such a good solvent.
