Please be patient with me. I've had to look this up. It appears that the blood cells differentiate from a common stem cell. They differentiate into two stem cells: 1. a myeloid stem cell. The myeloid stem cell matures into a CFU-GEMM progenitor cell which farther differentiates into five progenitors for eosinophils, basophils, neutrophils, monocyte, platelets, and red blood cells and 2. The lymphoid stem cell then differentiates into pro B and pro T cells and on to B lymphocytes and T lymphocytes. I believe it is the T lymphocyte which is known as the killer cell. There are many steps in this process and two of the cells also become tissue cells.
However, getting back to your original question; there is some process as cells differentiate, (become different cells), from a common stem cells that turns some genes on and other genes off. All cells have the same DNA within the same organism, but some genes or turned off in some cells.
