I'm assuming you're talking about an English essay.... Block style essays are when you talk about each topic in its own paragraph, instead of using the alternating style.
For example, if you are writing a compare and contrast paper, block style means that the first paragraph is only about the first book, the second paragraph is only about the second book, and the third paragraph is only comparison/contrast.
Hope this helps! The other kind of block style is formatting your text to take up the whole line. There's a button in Word that does it.

In block style letters everything lines up to the left of the margin. In a modified block style everything lines up at the left except the address which appears by the right margin.

Modified Block Style: Address block is on the right with the signature and the rest on the left. Semi Block Style: same as the modified block style, only each paragraph in the body is indented. Block Style: Everything lines up on the left margin
An example of using the block quote feature in Chicago style citation is when you quote a passage of text that is longer than four lines. In this case, you would indent the entire quote on both sides, use a smaller font size, and not use quotation marks.
