With the multiple hook and eye kind, squeeze the two sides together with thumb and third finger and use the first finger to flatten the bump that happens and to unhook any resisting hooks. You should be able to do it through a shirt or blouse.

With the front fastening catch, squeeze together with thumb and second finger, then push up with the thumb to release. Very easy.

With the bikini style big single barbed hook, its tricky. Really hard to use one hand. Use two hands and look at what you're doing.
