"Como eres tu?" does literally translate to "How are you?", but that is not how you would say it in spanish. You would ask " Como estas tu?" the response would be, "Estoy bien" I am well. Or " No muy bien". Not very well.

"Como estas" means how are you. Como estas would be easier to answer (and more accurate) since you can't read anyone else's minds.
However, you could say "Muy bien. Y tu?" or any adjective relating to how you feel.
Example:
Yo estoy cansada. Yo estoy abburida. Ella esta muy nerviosa. Ella esta enamorada.
