The grass will not only stay greener but will have the ability to combat disease, insects and heat stress. To answer your question 3 1/2 to 4 inches is good.
I know that some commercial mowers can go up to 6 inches...but that's overkill...you at least want it to look cut. I should mention that you can cut certain grasses low like Zoysia or Bermuda but I still wouldn't recommend it.
