Many surround receivers have surround simulation capability, however this is not true surround sound. Two-channel analog outputs from a DVD player can be decoded to 3 or 4 channel Dolby Surround (not the same as Dolby Digital or DTS) using the same surround receiver.
Quadraphonic sound represented the first large scale attempts to bring surround sound to homes. It was a natural progression from stereo audio systems but doomed to failure. In the 1970s a number of manufacturers began to produce 4 channel sound systems and the BBC even began experimental 4 channel radio broadcasts. Apart from the high cost, there were two reasons why it never gained popularity. First, all audio sources at the time were 2 channel analog and all tuned to handle audio frequencies. It was challenging to squeeze additional information into the sources and there was no consensus on the methods used. The result was a mix of incompatible sources and processors. Even the best attempts at quadraphonic were of limited quality and the audiophiles who were expected to drive the market were not inspired by it and remained firmly committed to stereo. The latest surround sound systems are digital and enjoy far higher higher bandwidth to handle the additional channels. Agreement on multi-channel encoding presented the public with easy choice for surround sound purchases but it is interesting to note that there is virtually no audio multi-channel content, only soundtracks for film and television.

Dolby 5.1 is a multi-channel audio format. Basically meaning, it's surround sound. There is a Left, Centre, Right, Left Surround, Right Surround and LFE (Sub) Speaker. Dolby 2.0 is simply 2 speakers, Left and Right. Similar to the Stereo sound you get from your TV. The Dolby bit means it has been compressed and encoded using Dolby technolgies, normally AC3.
