An acrostic poem has one line for each letter of the word it spells. The first letter of each line reading down spells a word. So if my acrostic poem were about love, it would be four lines, but if it were about romance, it would be seven lines long.
As many as you want. Each line is usually (not always) just a few words or sometimes even only one word that describes a word that's spelled out by the first letter of each line.

A quatorzain is a poem of fourteen lines. Historically the term has often been used interchangeably with the term 'sonnet'.
I was told by my English teacher that there are no rules or limits to a concrete poem but on the internet it said it was a shape poem! Anyhow, I don't think there's a rule for how many lines the poem has either way.
