First, we have to take into account that at one time, most documentations were written on scrolls. Thus, to open/close them, they were roll/unrolled.
Next came the folded scroll. Similar to todays brochures, the folded scroll was flat, and unfolded like an accordian.
Then came the folio. Folios were simply a long sheet of paper or parchment folded vertically in half (as opposed to multiple times like the folded scroll).
Eventually, these folios were sewn together to give us today's version of books as we know them.
