The actors were not all that different, but the actresses were. That's because there weren't any actresses in England in Shakespeare's day. On the continent, women appeared on stage, but not in England, where such a thing would be considered a show of public lewdness. Actresses did not perform in England until almost fifty years after Shakespeare's death.
The actors, new and old, in Shakespeare's company were called players. As were all other actors at the time.
Actors inevitably play the roles in Shakespeare's plays, although some roles nowadays are played by actresses. Sometimes these are professional actors who earn their money this way, and sometimes they are amateurs who have a different day job. Either way, people who are not in interested in acting rarely play Shakespeare's roles (or indeed any roles).
Unfortunately it was not common in Shakespeare's day to keep records of what actor played what part in any plays. We are fortunate in that Ben Jonson made a record of the actors who played in his plays Sejanus and Every Man in His Humour, and Shakespeare appeared in both those plays, although the record does not show what part he played. The First Folio also lists actors who played in Shakespeare's plays, including Shakespeare, but not who played in which play nor what part they took.
Shakespeare and the other actors were known as "players". It says that on his application for a coat of arms.
