We have no records, so we would have to guess. Herbs, likely, for seasonings, and medicines and for use in "sallets" (Elizabethans would find most of the salads we eat to be stale and tasteless without herbs and edible flowers). Flowers also were grown. A kitchen garden might have a number of vegetables such as turnips, onions, garlic, beans and squashes. If the garden had fruit trees there might be apples, medlars, Pears and quinces.

Bear in mind that new world foods had not yet made an impact on English eating habits. So, no potatoes or tomatoes.
