Originally it was because poems were not written down, so they had to be remembered. The easier they were to remember, the longer that they lasted for. Rhyming is a good way of remembering certain things and this is possibly why.
Well, there are probably a couple of purposes. One is that in many poetic forms, you need to know how the poem works in order to duplicate the form in your own poetry. If you want to write a villanelle or a Sonnet or a diamante, you want to know how those poems work... how many lines they have, and which lines rhyme with which, and if there are any rules about syllables or stress. So, a rhyme scheme is part of that... so that people can reproduce poetic forms. Another reason is so that people can talk about or describe poetry in general. The same reason we have words like stanza, or quatrain... so we can talk about poems and how they work, and why we like them with words that we can use to compare poems, even if they are not poems of the same form. In general, rhyme schemes help people know what to expect in rhyming poetry. If the first two stanzas were ABAB, then you will expect the same thing in the third, and it might jar you if the rhyme scheme changes.... kind of like a song (lots of poems are songs). Even when you have an unfinished rhyme scheme of ABA_ ... you are expecting something there, and if you don't get it, then the poem can slip right out of your comfort zone. ... So, in general, it is a good way to remember to resolve each rhyme, unless of course the author/poet is going for something outside your comfort zone. :)
Poem writers use rhyming in their poems because it makes it more fluently, and more graceful. They also rhyme because it puts in more expression, when they rhyme it puts more expression and more deep thoughts into their brilliant minds and beautiful work they do.
