I think that the primary difference is that poetry is concise. Instead of telling the entire story in lurid detail, poetry captures one moment... one emotion, and transports you there through very specific, exact word choice and sound and line breaks. It's more of an art form than regular writing because you're voluntarily working with certain restrictions such as form or rhyme or meter. Instead of a novel, or even a short story, poetry is condensed down to more of a bumper sticker, or twitter post, where you have to sum that world of meaning up in the comparative size of a postage stamp, and still say all of it. Poetry is difficult sometimes... to write, to read, to experience... but it can also be amazing and transformative, just as much as a novel can be, but in a moment rather than over a day of reading. Poetry is many-layered, intricate, and small, but there is so much flavor in that one bite that you experience a banquet.
