Because before they had a chance to do so, Romeo got into a fight with Juliet's cousin Tybalt and killed him, and has been run out of town. This happened after the wedding ceremony but before the wedding was consummated (before they had sex). Before the wedding was consummated, the marriage could easily have been annulled or cancelled and would have been if the parents had known. After the wedding was consummated, it could not be cancelled easily at all; the bride might be pregnant and there might be issues arising from that.
Unfortunately, by the time they were ready to present their marriage as a fait accompli, Mrs. Capulet was so mad at Romeo for killing her nephew that she was planning to have him murdered in Mantua. There was no way that she would accept him as a son-in-law at that point.
The parents of Romeo and Juliet are enemies due to some "ancient grudge". Earlier in the play, before they meet, Juliet's father seems to be prepared to believe that Romeo is a "virtuous and well-governed youth", but as the play goes on, it gets worse. After Romeo kills Tybalt, Juliet's mother goes ballistic, pleading for Romeo's death in court, and when he is only banished, planning to have him poisoned to please Juliet. This would not be a good time to tell her that Juliet has actually married Romeo.
We don't hear much about the Montagues, or what they might think about Juliet.
