A person who appears to know everything is sometimes called 'omniscient' meaning infinitely wise or smart. If someone only 'thinks' that they know everything, but they truly do not, then they are simply naive, egotistcal, or ignorant.
The word "humble" means someone shows modesty and does not always have to take credit for everything. For example, "Cassie was humble about her ideas".
The meaning of "someone who believes in everything" seems would be different than the meaning of "someone who knows everything." So, someone who believes in everything likely doesn't know everything, and likely also doesn't know a whole lot. Someone who doesn't know a whole lot may be described either as ignorant, to put it negatively if someone tends not to seek self- or other criticism, or as a lifelong student, to put it positively if someone realizes that a belief isn't necessarily a high-certainty belief approaching knowledge.
