Velocity is a vector, meaning that it has a direction. When it is being expressed, the direction is given with it (e.g. 5m/s NW).

Speed is a scalar, not a vector, so it doesn't have a direction connected with it. Thus, when it is expressed, the direction variable is omitted (e.g. 5m/s).

Acceleration is a change in velocity or speed over time. It will be a vector when it is referring to a change in velocty (e.g. 10m/s2 SE), and it will be a scaler when it is referring to a change in speed (e.g. 10m/s2).
