This is how yeast makes bread dough rise - the yeast use fermentation to break down sugar for energy, the waste product carbon dioxide forms bubbles in the gluten matrix and the bread rises! It also produces alcohol which is why bread smells sort of beery when it starts to bake. Or you can skip the baking add more water and let the yeast make beer!
